Here’s a cute idea for treats or for a child’s birthday party. The ice cream cones are teeny, tiny – about 1-.75″ tall (Joy Kids Cones from Walmart).
A cookie scoop or small melon baller is used to form the ice cream from the Rice Krispie mixture, then drizzled with melted almond bark or candy melts. To make the cones more stable, you can put some candy in the cone, then use the candy melts to “glue” the scoop to the cone. See tutorial at Cute As a Fox.

I love this Strawberry Pie recipe my mom makes. The filling is so good I could make a dessert of it poured over vanilla ice cream and topped with sliced strawberries.
Ingredients:
1 pie crust shell, baked (9 – 12 inch pie pan)
Filling:
- 1-1/2 c water
- 1-1/2 c sugar
- 4 Tbsp corn starch
- 1 small box strawberry jello
- 2-1/2 qt strawberries, fresh (or more!!! for taller pie!!)
- Optional whipped cream or Cool Whip for topping or serve with vanilla ice cream
Directions:
- In a saucepan, whisk together water, sugar and cornstarch. Cook over medium heat about 5 minutes until the sauce thickens.
- Add the strawberry Jell-O and whisk and stir until well blended and jello is dissolved. Remove from heat and let cool (don’t let it get set, just cooled).
- Wash the strawberries, pat dry, remove the hulls. Depending on how you want your pie to look, cut strawberries in half or leave them whole. Gently fold the strawberries into the Jell-O mixture.
- Pile the strawberries up in the baked pie shell to look like a hill.
- Refrigerate at least an hour.
- Serve as is or top with whipped cream, Cool Whip or vanilla ice cream.

Sweet summer corn, buttery Yukon Gold potatoes and smoky Canadian bacon are a tasty combination in this flavorful soup. Feel free to substitute your favorite fresh vegetables like asparagus and broccoli for the red pepper. Or to save time, substitute 2 cups of frozen corn and 1 cup of frozen, diced bell pepper for the fresh corn and red pepper.

Thirst quenching recipe uses bottled organic juice as the ultimate shortcut in this quick recipe.
Use lemon, lime or a combo and choose your favorite sweetener: sugar, honey or stevia.
Summer Lemonade
Ingredients:
- 1 cup 365 Everyday Value Organic 100% Lemon or Lime Juice, or some of each
- 3/4 cup 365 Everyday Value Organic Cane Sugar or ½ cup honey or ¾ tsp liquid Stevia extract
Directions:
Stir together 6 1/2 cups water, juice and sweetener of choice in a 2-quart pitcher.
Serve over ice.

Serves 8. Per serving: 70 calories (0 from fat), 0g total fat, 0g saturated fat, 0mg cholesterol, 5mg sodium, 20g total carbohydrate (0g dietary fiber, 19g sugar), 0g protein
