For the first time ever, my husband and I are staying “home alone” for New Year’s Eve. Next question was do we make dinner, order out or go out. We decided to make this fabulous Balsamic Pot Roast and we’re counting on having left overs to make Roast Beef Sandwiches tomorrow while we watch football.

Pan-Seared Scallops

While looking for ideas of what to serve New Year’s Eve, I found the recipe I love for Pan-Seared Scallops. They taste fabulous, they’re quick to prepare and beautiful to serve.

If you’re serving them buffet style, use a warming tray on low to keep them from getting too cold.  If your scallops are small enough, you can serve them with toothpicks, but if they are too large, a toothpick just won’t hold them and there’s a chance they will spill on your guests or your carpet.
