Homemade Banana-Coconut Ice Cream

March 26th, 2012

Banana Coconut Ice Cream

As a kid, one of my favorite things was when we would make home-made ice cream. We started with the old fashioned ice cream maker that you had to hand crank and all the kids got a try at it. When the electric ice cream makers came out, it took the work out of it and some of the nostalgia, but the ice cream it made as fabulous. I still remember peaches from my aunt Virginia’s tree in vanilla ice cream and all the cousins actually sitting still for the few minutes it took to eat it.

As bananas are one of my favorite flavors, I’m going to have to try this Banana-Coconut Ice Cream. It’s best with ripe bananas and the flavor is supposed to be more intense the next day, if it will last that long.

Ingredients:
2 cups sweetened flaked coconut
1 cup sugar
6 egg yolks
4 cups milk
2 cups half-and-half
1 (15-ounce) can cream of coconut
2 teaspoons vanilla extract
3 ripe bananas, mashed
Garnish: toasted sweetened flaked coconut

Directions:
Bake coconut in a shallow pan at 350°, stirring occasionally, 10 minutes or until toasted.

Whisk together sugar, egg yolks, and milk in a heavy saucepan over medium heat; cook, whisking constantly, 20 minutes or until mixture thickens and will coat a spoon (do not boil).

Remove from heat; whisk in toasted coconut, half-and-half, cream of coconut, and vanilla. Fold in banana. Cover and chill 3 hours.
Pour mixture into freezer container of a 1-gallon hand-turned or electric ice-cream freezer. Freeze according to manufacturer’s instructions.
Pack freezer with additional ice and rock salt, and let stand 1 hour before serving. Garnish, if desired.

Note: For testing purposes only, Coco Lopez Cream of Coconut was used.

Talk Derby to Me: Kentucky Derby Infield Punch

March 20th, 2012

What drinks will you serve your Kentucky Derby party guests?

The Mint Julep is the official drink of the Kentucky Derby but if you’re not a fan of bourbon, why not try “Infield Punch” instead.

It’s red color will match a “Run for the Roses” party theme and it is easy to serve a crowd from a punch bowl or a pitcher.

Yogurt Covered Blueberries

Yogurt Covered Blueberries

Start with two cups of honey flavored yogurt like Dannon Oikos Greek Yogurt and a carton of fresh blueberries.

Stick of toothpick in a berry, dip and swirl it in the yogurt. Use a second toothpick to push it off onto a wax paper lined cookie sheet. When done, place them in the freezer for about an hour, then take them out, pop them off the wax paper and store in a baggie.

Talk Derby to Me: Non-Alcoholic Mint Julep Recipe

March 11th, 2012

Non-Alcoholic Mint Julep RecipeA perfect choice for your Kentucky Derby Party, to serve adults who would rather skip the booze but still enjoy a Mint Julep, is the non-alcoholic Mint Julep. If you have kids at your party, they can also enjoy these juleps.

Because the sugar-mint mixture takes a few minutes to mix and then 45 minutes to meld the flavors, be sure to make more than enough at once to serve all your guests.

Ingredients:
1-1/2 cups sugar
2 cups cold water
5 cups crushed ice
2-1/2 cups chilled ginger ale
3/4 cup lemon juice
6 mint springs (at least – no stems)
Lemon slices for garnish if you wish

Directions:
Mix sugar, cold water, lemon juice and at least six mint sprigs (crush the mint to release the flavor) in a bowl and let stand for 45 minutes for flavors to meld. Strain mixture and remove mint.

Using two 2 quart pitchers place half of the sugar-mint mixture and half of the ginger ale in each pitcher. Top with additional mint sprigs in the pitchers or use for each glass. Set out lemon slices separately for guests to add to their drinks.

This recipe makes approximately 3 quarts of Non-Alcoholic Mint Julep
About 12 – 8 ounce cups

Why Green for St. Patrick’s Day?

March 10th, 2012

Why Green on St Patricks Day

St. Patrick’s Day falls on March 17th every year (supposedly the day he died) in honor of St. Patrick himself. But do you know why green is the color of St. Patrick’s Day?

Wearing of the green traces back to when Ireland was separated and the Catholics lived on the “green side” and the Protestants lived on the “orange side.” The Irish flag is green, orange and white. Green represents the catholic side of Ireland, orange the Protestants and white represents those where were neutral and were composed of the descendants of the Celts.

So why do everything up green on St. Patrick’s Day? Because the term “saint” is more a Catholic term than a Protestant one, the green of the Irish flag represents the Catholics, and that’s why green is the color for St. Patrick’s Day!

Talk Derby to Me: My Old Kentucky Home Lyrics

My Old Kentucky Home Song Lyrics

The horses have stepped onto the track for the Kentucky Derby post parade and the band strikes up “My Old Kentucky Home.”

Unless you are from Kentucky, you might not know the words, so print off the lyrics below so your party guests can sing along.

————————–

My Old Kentucky Home
By Stephen Foster

The sun shines bright in the old Kentucky home,
Tis summer, the people are gay;
The corn-top’s ripe and the meadow’s in the bloom
While the birds make music all the day.
The young folks roll on the little cabin floor
All merry, all happy and bright;
By’n by hard times comes a knocking at the door
Then my old Kentucky home, Good-night!
Weep no more my lady. Oh! Weep no more today!
We will sing one song for my old Kentucky home
For the old Kentucky home, far away.
